It’s Friday again! And, this week I have the privilege of co-hosting Angie’s Fiesta Friday #111  with a fellow blogger whose talent I have admired for a few years now. Today I am bringing a flavourful slaw that I a am completely enamored with.  Think garden fresh carrots in a lemony, spicy dressing, accented with sweet dates and crunchy pistachios!  It doesn’t get any better! Let’s face it, spring is virtually upon us and we will soon be in the back yard grilling. This slaw will be perfect for your spring and summer picnics, and it because of the spices, it will accompany any  Middle Eastern or North African meals. I really hope you enjoy it! This recipe is from my new, most favourite cookbook, “The Real Paleo Diet Cookbook” by Loren Cordain.

Spicy Carrot Slaw

Ingredients:

¼ cup snipped fresh parsley

½ teaspoon finely shredded lemon peel

¼ cup fresh lemon juice

2 tablespoons olive oil

¼ teaspoon ground cumin

¼ teaspoon ground cinnamon

¼ teaspoon smoked paprika

¼ teaspoon crushed red pepper

½ teaspoon salt

2 cups coarsely shredded carrots

½ cup chopped pitted dates

¼ cup sliced green onions

¼ cup coarsley chopped pistachios

Method:

In a large bowl, combine the parsley, lemon peel, lemon juice, olive oil, cumin, cinnamon, paprika, and crushed red pepper. Add the carrots, dates, and green onions. Toss to coat with dressing.

Just before serving, sprinkle with the pistachios.

    This slaw looks so refreshing and colorful! Just what we need right now as we are longing for spring! I have never added dates or pistachios to slaw before, but it sounds delicious.
